Ingredients

  • 1 medium onion (s)
  • some oil
  • 1 liter vegetable broth
  • 1 bunch soup greens, with leek, no cauliflower
  • 5 medium potato (s)
  • 1 teaspoon salt
  • some pepper
  • 1 can beans, white
  • 4 thick sausage

Instructions

  1. Peel and finely dice the onion. Wash the leek stick and cut into slices. Peel the carrot and cut into strips. Peel the celery, leave whole. Peel the potatoes and cut into cubes approx. 2 cm thick. Wash and finely chop the parsley.
  2. Sauté the onion in a little oil in a saucepan, deglaze with the stock. Add vegetables to the soup. Salt and pepper, bring to the boil and cook for approx. 20-25 minutes.
  3. Then take the celery piece out of the soup, puree it and add it again.
  4. Drain the beans, add them too. Cut the sausages into slices and add them as well.
  5. Briefly heat the soup again. Sprinkle with the parsley.
