Ingredients

  • 1 can beans, white, approx. 500 g
  • 400 g parsnip (s)
  • 1 medium onion (s)
  • 2 tablespoon olive oil
  • 2 tablespoon tomato paste
  • 200 ml vegetable stock
  • 1 teaspoon sambal oelek
  • 2 apples
  • some butter
  • salt and pepper
  • 1 teaspoon coriander powder
  • 1 teaspoon, heaped paprika powder
  • parsley

Instructions

  1. Open the can with the white beans and drain the water.
  2. Peel and dice parsnips. Then peel and dice the onion.
  3. Wash the apples and cut out the core. Slice both apples. We didn`t peel the apples. Why also?
  4. Heat olive oil in a saucepan or large pan and sauté the diced onions over medium heat for 2 minutes. Add the diced parsnips and cook for another 4 minutes. Add the tomato paste and stir in. Caramelizing is desirable here. Add the vegetable stock and the white beans. Stir and mix everything well. Season to taste with salt, pepper, coriander, paprika powder and sambal oelek. Simmer over low heat for about 10 minutes.
  5. Just before serving, pour the chopped parsley over the beans to taste.
  6. In the meantime, heat a little butter in a second pan and steam the apple slices in it for 4 minutes on each side.
  7. Arrange the plates. First fill in the beans with the parsnips, then garnish with the apple slices.
