Ingredients

  • 2 handfuls wild garlic, fresh
  • 2 medium onion (s)
  • 2 spring onion (s)
  • 2 tablespoon clarified butter or butter
  • 1 tablespoon flour
  • 3 tablespoon vegetable stock, instant
  • 125 ml sweet cream
  • 2 egg yolks
  • 200 ml milk
  • 1 pinch (s) salt and pepper, white
  • 200 g cream cheese

Instructions

  1. Wash and chop the wild garlic with a knife and put aside.
  2. Then peel the onion, cut into small pieces and sauté in the hot clarified butter / butter. Add the flour and stir the onion melt into the vegetable stock, which has been mixed with water. Add the cleaned and finely chopped spring onions and season with the spices. Save a few sliced spring onions for decoration.
  3. Stir in the Philadelphia cheese and then mix the egg yolks with the sweet cream and milk and add the wild garlic. Stir the soup with the hand blender / magic wand and add a few fresh strips of wild garlic as a decoration under the soup after it has been removed from the fire. Then you can serve them.
