Ingredients

  • 300 g honey cake
  • 150 ml apple juice
  • 800 g apples
  • 2 tablespoon lemon juice
  • 80 g suar
  • 100 g raisins
  • 2 tablespoon pudding powder, vanilla
  • 1 teaspoon cinnamon
  • 75 g almond sticks
  • Tbsp rum
  • 250 g mascarpone
  • 500 g quark
  • 2 packs vanilla sugar (bourbon)
  • 3 tablespoon sugar
  • 50 g brittle

Instructions

  1. Cut the honey cake into approx. 1.5 cm wide slices. Cover the bottom of a baking dish with it. Spread 5 tablespoon apple juice over the top.
  2. Wash, peel and dice the apples and place in a large saucepan. Steam together with the lemon juice, 80 g sugar and raisins for 5 minutes. Meanwhile, stir the remaining apple juice with the pudding powder until smooth. Add to the apples and bring to the boil briefly. Then add the cinnamon, the almond sticks and possibly 2 tablespoons of rum (rum flavoring is also possible) and, if necessary, season to taste and let cool down completely. Then spread it on the honey cake.
  3. For the cream, mix the mascarpone, quark, vanilla sugar and sugar and place in the baking dish on top of the apples. Just before serving, spread the brittle on the cream.
