  • 4 pork steak (s) (butterflies)
  • 2 large apples (Boskoop)
  • 2 spring onion (s)
  • 250 g oat cream cheese
  • 200 ml cream
  • Clarified butter, for frying
  • salt and pepper
  • marjoram
  • Apple juice
  • honey

Instructions

  1. Wash the apples and spring onions and cut into fine cubes, mix in a bowl with the fresh goat`s cheese, which has also been diced. Season with salt, pepper and marjoram.
  2. Grow steaks, pat dry and season the inside with a little salt and pepper, add some filling (depending on size approx. 1-2 tablespoon), close and close with a toothpick if necessary.
  3. Heat clarified butter in a heavy pan and sear the steaks for 1 minute on each side, place in a baking dish and continue to cook in the oven at 160 degrees for 10 minutes.
  4. In the meantime, lightly sweat the rest of the filling in the pan, deglaze with cream and apple juice and allow to thicken, season to taste with salt, pepper and marjoram and sweeten a little with honey.
  5. Arrange the steaks on plates, pour the leaked meat juice from the baking dish into the cream sauce, mix and also add to the steaks.
  6. Baked potato wedges go very well as a side dish.
