Ingredients

  • 150 ml milk
  • 10 g yeast, fresh
  • 60 g suar
  • 280 g flour
  • 80 g butter
  • salt
  • 30 g raisins
  • 30 g almond (s), chopped
  • 15 g orane peel
  • 15 g lemon peel
  • 1 egg (s)

For decoration:

  • 1 egg yolk
  • 2 tablespoon sugar
  • 50 g almond (s) (sticks)

Instructions

  1. Line the muffin pan with paper liners.
  2. Warm the milk in a small saucepan. Crumble the yeast in a cup and mix with 4 tablespoons of the warm milk and 1 tablespoon of sugar.
  3. Add 2 teaspoons of flour and stir. Cover and let the dough rise in a warm place for about 20 minutes.
  4. Put the rest of the flour and the starter dough in a bowl. Add the butter in small pieces. Add the remaining sugar, salt, raisins, almonds, orange peel, lemon peel and egg.
  5. Pour in the rest of the milk and knead everything until the dough comes off the edge of the bowl by itself.
  6. Cover the dough again and let it rise in a warm place for about 30 minutes until it has visibly enlarged.
  7. In the meantime, preheat the oven to 175 ° C.
  8. Shape the dough into 12 balls of the same size with floured hands and place in the muffin molds.
  9. Whisk the egg yolks with a fork and brush the muffins with it. Scatter the sugar and the almond sticks on top.
  10. Put the muffins in the oven and bake until golden for about 20-25 minutes.
