Yellow Squash with Garlic, Hot Peppers and Herbs

An incredibly simple and delicious vegetable dish that will be appreciated by vegans and all those who follow a healthy diet. The easiest way to serve Spaghetti pumpkin is to boil it, divide it into “spaghetti” and season with aromatic garlic oil and herbs. You can also use this recipe as a base and add other ingredients as you like. Or serve Spaghetti Pumpkin as a vegetable side dish with meat dishes.

Ingredients

  • 1/4 Art. water
  • 2 garlic cloves, chopped
  • Olive oil
  • 2 tbsp chopped parsley, chives, and pickled cherry peppers
  • Salt
  • Pepper

Directions

  1. Place 2 halves of Spaghetti pumpkin in a microwave-safe bowl; add 1/4 tablespoon. water, cover, and microwave for 16 minutes.
  2. Let cool slightly, then use a fork to divide the pumpkin into fibers.
  3. Sauté 2 chopped garlic cloves in olive oil until golden brown.
  4. Add to the pumpkin. Put there 2 tbsp chopped parsley, chives, and pickled cherry peppers; stir.
  5. Season the dish with salt and pepper.
