Ingredients

  • 3 bell pepper (s), yellow
  • 3 spring onion (s)
  • 3 zucchini

For the vinaigrette:

  • 3 tablespoon oil (safflower oil)
  • 2 tablespoon white wine vinegar
  • salt and pepper
  • 1 teaspoon mustard

Instructions

  1. Clean, wash and core the peppers and cut into narrow strips. Halve this again. Clean the spring onions and cut into very narrow rings. Clean, wash and thinly slice the zucchini.
  2. Beat the ingredients for the vinaigrette in a salad bowl with the whisk and turn the vegetables in it. Let it sit for 30 minutes. I also serve a warm baguette.
