Zucchini and Pasta Salad

I learned how to make a zucchini and pasta salad when I was translating my menu into healthy rails. My motto was “vegetables instead of pork”! This is an interesting and satisfying salad, everyone loves pasta so much!

Servings: 4-6

Ingredients

  • Vegetable oil – 2/3 Cup (deep fat)
  • Medium zucchini – 3 pieces
  • Wine vinegar – 1.5 tbsp
  • Parsley – 1/4 Cup
  • Olive oil – 1/3 Cup
  • Basil – 1 Piece (bunch)
  • Olive oil – 1/3 Cup (dressing)
  • Pasta – 250 Grams
  • Lemon zest – 1 Piece
  • Mozzarella – 200 Grams
  • Salt, pepper – To taste

Directions

  1. Prepare food.
  2. Boil the pasta.
  3. Cut the zucchini into rings.
  4. Fry the zucchini in oil.
  5. Put the zucchini on a towel to remove excess oil.
  6. Grind herbs with lemon juice, olive oil in a blender.
  7. In a bowl, combine mozzarella, basil, zucchini pasta.
  8. Zucchini and pasta salad
