Zucchini and Tomato Puree

I never thought that baby food can be so varied! How interesting are the combinations of various vegetables and fruits. And everything useful and nutritious. Here’s another such recipe.

Servings: 4

Ingredients

  • Tomato – 300 Grams
  • Zucchini – 1 Piece
  • Avocado – 1 Piece
  • Basil – 6 Pieces (leaves)
  • Mint – 2 Pieces
  • Pine nuts – 10 Grams
  • Feta – 40 Grams
  • Garlic – 0.5 Cloves
  • Olive oil – 4 Tbsp. spoons
  • Lemon juice – 0.5 Tbsp. spoons
  • Salt – 1 Pinch

Directions

  1. Boil the tomatoes in boiling water for 1 minute, then peel them off and chop coarsely.
  2. At the same time, cut the zucchini into cubes. Place them on a baking sheet. Drizzle with oil, salt and finely chopped garlic. Bake the slices for 20 minutes at 180 degrees.
  3. Then combine tomatoes, basil, mint, zucchini, juice, oil and avocado in a blender. Save a couple of zucchini pieces for serving.
  4. Puree the ingredients.
  5. Lightly fry the nuts in a dry frying pan until golden brown.
  6. Serve the zucchini, nuts and feta puree.
