Zucchini Puree Soup

Zucchini cream soup is one of the best slimming dishes! It tastes great and helps you stay on your diet.

Ingredients

  • Zucchini – 700 g
  • Rice – 100 g
  • Bulb onions – 1 pc.
  • Lemon – quarter
  • Turmeric – 1 teaspoon
  • Dill greens – 20 g
  • Rusks
  • Salt – 1 teaspoon
  • Vegetable oil – 2 tablespoons

Directions

  1. Wash 1 large or 2 small courgettes.
  2. Peel the zucchini, divide lengthwise and then cut into medium cubes.
  3. Put the zucchini in a deep dish, sprinkle with turmeric and sprinkle with lemon quarter juice. Mix.
  4. Chop the onions finely.
  5. Heat vegetable oil in a frying pan and fry finely chopped onions, 3-5 minutes.
  6. Add zucchini to the onion, fry, stirring occasionally for 5-7 minutes.
  7. Pour 1 liter of water into a saucepan and put on fire. As soon as the water boils, add 100 grams of washed rice, cook for about 10 minutes.
  8. Add fried courgettes to semi-cooked rice in broth. Season with salt and stir. Cook over low heat, 10 minutes.
  9. Grind the contents of the pot with the hand blender attachment. Cook, stirring occasionally, over low heat for another 10 minutes. If the zucchini soup seems too thick to you, simply add a little more water or vegetable stock at this stage.
  10. Pour the prepared zucchini puree soup into bowls, put the crackers and add finely chopped herbs.
  11. The squash soup is ready.
