Zucchini Baked with Chicken Fillet and Tomatoes

I offer a recipe for baked zucchini with chicken fillet and tomatoes. This dish has everything – vegetables, meat, cheese. It turns out satisfying and very tasty. A wonderful lunch or dinner that everyone will enjoy without exception.

Ingredients

  • Young zucchini – 500-520 g
  • Chicken fillet (breast) – 400 g
  • Tomatoes – 300 g
  • Onions – 220 g
  • Carrots – 160 g
  • Sour cream – 80 g
  • Mayonnaise – 100 g
  • Green onions – 40 g
  • Dutch cheese – 100 g
  • Egg – 1 pc.
  • Garlic – 2 cloves
  • Salt to taste
  • Ground black pepper – 0.5 teaspoon
  • Ground red hot pepper (optional) – 0.5 teaspoon
  • Vegetable oil – 4 tbsp

Directions

  1. Peel and dice the onions. Peel and rub the carrots on a coarse grater. In a frying pan with 3 tablespoon. fry the onions with tablespoons of vegetable oil over medium heat for about 4 minutes, stirring occasionally, until transparent and lightly browned. Then we spread the carrots to the fried onions.
  2. Fry the onions and carrots for another 5 minutes and remove the pan from the heat. Rub the cheese on a coarse grater. Cut the chicken breast into small pieces. Finely chop the green onion.
  3. Peel and squeeze the garlic through a press. In a bowl, combine meat, cheese, green onions, onions with carrots, sour cream, 50 g of mayonnaise, salt, and black pepper to taste, egg, and garlic. Add red hot peppers if desired. We mix. Cut the zucchini into slices about 1 cm thick.
  4. Preheat the oven to 220 degrees. Lubricate the form with the remaining vegetable oil. We spread half of the zucchini in a mold in one layer. Lightly salt the zucchini.
  5. Cut the tomato in half, and then cut it across into slices.
  6. Put half the meat with vegetables and cheese on top of the zucchini. Next, layout half of the tomatoes.
  7. Put the remaining zucchini on the tomatoes in one layer, salt. Put the remaining mixture of meat, vegetables, and cheese on top of the zucchini. Then lay out the remaining tomatoes.
  8. Decorate the zucchini with chicken fillet and tomatoes on top with a mayonnaise mesh.
  9. We put the form in a preheated oven and bake zucchini with chicken and tomatoes at 220 degrees for 40-50 minutes.
  10. Zucchini baked with chicken breast and tomatoes are ready.
