Ingredients

  • 100 g bulur
  • 1 teaspoon butter
  • 300 ml salt water
  • 700 g zucchini
  • 2 bell pepper (s)
  • 1 teaspoon thyme or 3 sprigs
  • 200 ml vegetable stock
  • 2 tomato (s)
  • 3 spring onion (s)
  • 150 g feta cheese
  • salt and pepper
  • Paprika powder

Instructions

  1. Wash the zucchini, peppers and tomatoes and cut into small cubes. Clean and wash the spring onions and cut into rings.
  2. Sweat the bulgur in the butter. Add 300 ml salted water, simmer for 12-15 minutes while stirring.
  3. Fry the zucchini in another saucepan for about 5 minutes, remove. Fry the paprika and thyme. Add the zucchini, tomatoes and spring onions. Pour in the broth and bring everything to a boil.
  4. Dice the feta cheese. Add bulgur and feta cheese to the vegetables, season with salt, pepper and paprika powder.
  5. Tip: Instead of the zucchini you can also use an aubergine, which is also super delicious!
