by Editorial Staff

A casserole cooked in a slow cooker is usually fried on the bottom and light on top, which is just the right option for meat dishes with vegetables.

For the filling:

  • Cheese (semi-hard or pickled) – about 50 g
  • Dill – 1 bunch

Zucchini Casserole with Minced Meat (in a Slow Cooker) Instructions

  1. Peel the onion, chop in half rings or dice.
  2. Fry the onions in a frying pan with vegetable oil for 5 minutes. Do not start frying onions in a hot pan, so that they do not burn out immediately. Then add the minced meat to it and fry for about 10-15 minutes, stirring occasionally. Salt to taste, add a mixture of ground peppers if desired. If you like spicy, then use ground red and/or black peppers, if you prefer more aromatic than hot spices, then allspice and pink peppers are suitable.

  3. The casserole can be cooked directly in the multicooker bowl, but it is more convenient to do it in the form. Stock up on silicone or foil molds that fit the bottom of the bowl. Place the minced meat in the first layer in a greased form.
  4. To pour, mix eggs with sour cream and a pinch of salt.
  5. Peel the zucchini and garlic. Chop the zucchini pulp and cloves of garlic by hand with a knife or with a blender. Rubbing the zucchini on a grater will give too much juice, so I don’t recommend it, but if you do, then squeeze out the excess moisture.
  6. Cut the tomatoes into slices. Cover the meat layer with zucchini, pour over the egg mass, and layout the tomatoes.

  7. Place the casserole dish in the multicooker and set the Bake or Casserole setting for 1 hour.
  8. Zucchini casserole with meat is tasty on its own but also goes well with various sauces, cheese, and herbs. The cheese for serving the casserole must be grated (semi-hard and brine varieties are suitable), and fresh herbs (for example, dill) must be finely chopped.
  9. Sprinkle the cooked casserole with cheese and herbs. Zucchini and minced meat casserole cooked in a slow cooker are ready. It can be a separate dish or garnished with cereals or mashed potatoes.
