How many interesting dishes you can cook with zucchini! For example, here is a kind of fake chebureki. This is a recipe for a dish cooked from pancake batter with grated zucchini. Minced boiled beef is inside the zucchini “chebureki”. Such chebureki are nourishing and very tasty.
Ingredients
Zucchini – 550 g
Beef – 430 g
Onions – 150 g
Fresh dill – 30 g
Flour – 250 g
Milk – 350 ml
Eggs – 2 pcs.
Salt – to taste
Pepper – to taste
Vegetable oil – 190 ml
Directions
Cut the meat into large chunks, pour a little water in a saucepan, and simmer it slowly for about 1 hour until done.
After the meat is cooked, put it on a plate to cool.
Dice the onions and put them into a heated frying pan with the vegetable oil. Brown the onions over medium heat for 4-5 minutes stirring constantly.
Put the meat and onions through a meat grinder.
Add salt and pepper to taste to the mass. Mix everything.
Grate the zucchini on a medium grater. Add the eggs, milk, flour, salt, pepper, and 70 ml of vegetable oil to the zucchini. Mix all together well. The batter should be a little thicker than for pancakes.
Heat a frying pan and pour in a couple of tablespoons of oil. When the oil is hot, pour a portion of the batter into the pan to completely cover the bottom.
Put 2-3 tablespoons of the filling on half of the pancake.
Once the pancake has slightly got brown after 1 to 2 minutes, use a spatula to cover the filling with the free part of the pancake. Press the edges to make them stick together.
Brown the zucchini chebureki with meat for 2-3 minutes on each side. Do the same with all the batter and filling. While frying, add more vegetable oil if needed.
Place the cooked zucchini “chebureki” on a napkin to remove the excess oil.
