Ingredients

  • 2 zucchini, cut into smaller pieces
  • 1 onion (s), finely chopped
  • 50 g butter
  • 1 large clove (s) garlic, finely chopped
  • 1 teaspoon curry powder
  • 100 g whipped cream
  • 500 g veetable broth
  • salt
  • oil

Instructions

  1. Fry the zucchini, onion and garlic in oil in a 2 liter saucepan. Don`t cover up! The vegetables must fry until they are soft.
  2. Puree the vegetables in the food processor. Add half of the broth and continue to puree.
  3. Add the vegetables, the rest of the broth and the whipped cream to the saucepan. Mix with the curry. Salt, but not pepper.
