Ingredients

  • 2 small zucchini, about 15 cm long
  • 125 g feta cheese
  • 1 tablespoon Herbs Provence
  • 3 tablespoon olive oil
  • 1 clove garlic
  • 6 small cherry tomatoes
  • some olives, black
  • 2 small spring onions
  • Salt and pepper, freshly ground

Instructions

  1. Wash and clean the zucchini, but do not remove the end of the stem. Cut the zucchini lengthways three times almost to the end of the stem.
  2. Cut the feta cheese into long strips and place them between the zucchini incisions.
  3. Peel the garlic and cut into wafer-thin slices, mix with the herbs, 2 tablespoons of olive oil and freshly ground pepper and brush the zucchini fans with it. Cover and leave to marinate for 30 minutes.
