Ingredients

  • 4 zucchini
  • 3 tablespoon flour
  • 6 tablespoon olive oil
  • 0.5 ½ bell pepper (s), red
  • 100 g cream cheese, reduced fat
  • 150 g ham, cooked in thin slices
  • 1 bunch basil
  • 3 tablespoon lemon juice
  • salt and pepper
  • Cayenne pepper

Instructions

  1. Slice the zucchini lengthways into thin slices. Put the flour on a plate and lightly flour the zucchini slices in it. Fry in the oil in portions, turning, and drain on paper towels.
  2. Cut the bell pepper into very small cubes and mix with the cream cheese. Season to taste with the spices. Cut ham into strips.
  3. Brush each zucchini slice with a little cream cheese and cover with strips of ham, roll up and pin the ends with a toothpick; Place on a plate, drizzle the lemon juice over it and garnish with basil.
  4. Variation: cut the courgette boat, remove the core and cook in salted water until firm to the bite, then fill with the mixture.
