Ingredients

  • 1 kg zucchini
  • 350 g smoked tofu
  • 20 g iner root
  • 2 cloves garlic)
  • 3 tablespoon oil
  • 2 tablespoon sesame seeds
  • 3 onion (s)
  • 1 lime (s), add the juice from it
  • salt and pepper
  • soy sauce

Instructions

  1. Wash and clean the zucchini, cut off the ends. Then cut the zucchini into long thin strips with a spiral cutter / julienne cutter, so that spaghetti is formed. Put aside.
  2. Peel the onions and cut into strips. Then fry them in a large pan with a little oil until they turn golden brown. Meanwhile, peel and finely chop the ginger and garlic. Roughly crumble the tofu or cut into small cubes.
  3. Either take a new pan or pack the tofu with the onions and stir-fry it for about 2 minutes. Add ginger, garlic and sesame seeds and fry for another 3 minutes. Season with soy sauce. Take the tofu and onion mix out of the pan and keep warm.
  4. Wipe the pan with kitchen paper and heat some oil in it. Steam the zucchini noodles in it for approx. 3 minutes while turning until al dente. Season to taste with salt, pepper and lime juice.
  5. Serve the noodles with the tofu mix and pour the fried onions over them.
