Ingredients

  • 240 g suar
  • 1 packet vanilla sugar
  • 3 egg (s)
  • 125 ml oil
  • 1 teaspoon cinnamon
  • 200 g zucchini, finely rated
  • 240 g flour
  • 0.5 ½ pack baking powder
  • 100 g nuts (hazelnuts or walnuts), round
  • Breadcrumbs and oil for the mold
  • possibly cake icing (chocolate)

Instructions

  1. Whisk eggs with sugar and vanilla sugar. Add the oil and cinnamon. Fold in the grated zucchini. Mix in flour with baking powder and stir in the nuts. Grease a cup cake tin with oil and sprinkle with breadcrumbs. Pour in the dough and bake at 180 ° C for about 1 hour.
  2. Covered with chocolate icing, it stays fresh longer.
