Ingredients

  • 1 ½ kg potato (s)
  • 250 g radish (s), your choice mild or hot
  • 4 large onion (s)
  • 500 g zucchini
  • 3 egg (s), grade A
  • 15 tablespoon, heaped flour
  • 30 g salt
  • Rapeseed oil, or olive oil for frying

Instructions

  1. Peel the potatoes, radish and onions, then grate finely. Coarsely grate the zucchini unpeeled. Whisk the eggs with the salt and herbs, then stir well into the grating mixture. Add the flour by tablespoon, stirring constantly. If the dough remains too runny, stir in a little more flour. Finally, bake in the pan to make potato pancakes.
  2. Serve with tzatziki or other side dish of your choice. The recipe is enough for about 25 potato pancakes.
