So few people cook, but in vain! Young zucchini rolls with minced meat and rice are tender, very juicy and tasty. Zucchini rolls with minced meat are baked in the oven with vegetable sauce.
Ingredients
Young zucchini – 4 pcs.
Minced meat lean (I have minced turkey) – 250 g
Rice (cooked until half cooked) – 100 g (about 50 g dry, or half a packet of boiled rice)
Salt to taste
Ground pepper – to taste
Fresh greens (for serving) – to taste *
For the sauce:
Tomato puree with tomato slices – 200 g
(or tomato paste – 1 tablespoon)
Carrots – 1 pc.
Bulb onions – 1 pc.
Garlic – 3 cloves
Ground pepper – to taste
Dried spices (basil, oregano, cumin) – to taste
Salt to taste
Ground pepper – to taste
Vegetable oil – for frying vegetables
Directions
Add salt (1 teaspoon) to boiling water and boil rice in a bag until half cooked, for 10 minutes. Then let the rice cool completely. We only need 0.5 bag of boiled rice.
Add boiled rice, salt, ground pepper to the minced meat. Mix well. The filling is ready.
For this dish, we use young zucchini, in which the seeds have not yet formed. Zucchini trimmed around the edges and cut along thin wide strips (about 20 pieces). Zucchini trimmings can be cooked with rolls.
Put the zucchini strips on a baking sheet covered with parchment. We put the zucchini in a preheated oven and bake for about 15 minutes at a temperature of 190 degrees. We bake the zucchini only until soft, so that later they can be easily rolled into a roll.
We moisten our hands with water, take a small amount of minced meat with rice and form a cutlet. Spread the filling on the wider edge of the zucchini slice and roll into a roll.
We spread the zucchini rolls tightly into the shape with the seam down (shape size – 22x13x6 cm).
Cut the onion into medium cubes and fry in a preheated pan with vegetable oil until transparent. Peel the carrots, rub on a coarse grater and add to the onion. Fry for 3 minutes. Finely chop the garlic. Add tomato puree, garlic, spices (I have basil, oregano, cumin), ground pepper and salt to the vegetables. Stir, heat for 3 minutes and remove the dressing sauce from the heat.
Spread the vegetable sauce on the squash rolls so that they are completely covered. Add boiling water to the middle of the mold.
Cover with foil (shiny side inward), make several punctures for steam to escape. We bake zucchini rolls in the oven at a temperature of 190 degrees for 45-60 minutes (focus on your oven, I baked the rolls for 1 hour).
Zucchini rolls with minced meat are ready! It is better to serve them warm. Pour the vegetable sauce in which the rolls were baked and sprinkle with fresh herbs.
