Ingredients

  • 1 zucchini, yellow
  • 1 zucchini, green
  • salt
  • 6 sprigs mint
  • 1 lime (s)
  • olive oil
  • Salt, (fleur de sel)
  • Black pepper from the mill
  • 1 pinch (s) chilli, (Piment d`Espelette)

Instructions

  1. Use the peeler to slice the zucchini lengthways into fine strips. Work from all four sides and leave the core house standing. Salt generously and let steep for 30 minutes.
  2. In the meantime, pluck the mint leaves from the stems and cut into very fine strips.
  3. Mix the lime juice, salt, pepper, piment d`Espelette and olive oil into a vinaigrette.
  4. Take the zucchini out of the bowl, rinse with cold water and drain. Mix with the mint and marinate with the vinaigrette.
  5. Tastes particularly good with fish or chicken breast.
