Ingredients

  • 400 g salmon, smoked
  • 1 ½ bunch spring onion (s)
  • 2 large apples, tart ones
  • 2 tablespoon lemon juice
  • 1 teaspoon mustard and honey
  • salt and pepper
  • 2 small zucchini
  • oil
  • chives

Instructions

  1. Cut the smoked salmon into small cubes. Clean and wash the spring onions and cut into thin rings. Peel the apples, remove the core, cut into small cubes and drizzle with lemon juice.
  2. Carefully mix the salmon, onions and apples, season with mustard, honey, salt and pepper, leave to stand for 30 minutes.
  3. Clean and wash the zucchini and cut lengthways into thin slices.
  4. Heat oil in a pan. Fry the zucchini slices briefly on both sides, season with salt and pepper. Allow to cool slightly. Roll the salmon mixture in portions into the zucchini slices.
  5. It looks nice when you knot the rolls with chives.
