Ingredients

  • 2 zucchini
  • 1 clove garlic
  • 1 handful fresh basil
  • some cheese (Grana Padano or Parmesan)
  • olive oil
  • salt and pepper

Instructions

  1. Wash the zucchini, halve lengthways and cut into small slices. Fry in hot olive oil, then reduce the heat. Finely chop the garlic, add and sauté, turning the zucchini every now and then. Salt, pepper.
  2. Chop or weigh the basil. Add after approx. 5 - 7 minutes. Turn off the stove! Grate the cheese over it to taste (not too much! Should only give a small, fine note).
  3. Goes wonderfully with veal schnitzel (e.g. with white wine sauce), saltimbocca à la Romana and the like.
