Ingredients

For the dough:

  • 200 g flour
  • 75 g butter
  • 1 egg yolk
  • 1 teaspoon salt
  • 3 tablespoon water, cold

For the filling:

  • 4 leeks
  • 1 tablespoon butter
  • 250 ml milk
  • 3 egg (s)
  • Salt and pepper, white
  • 1 pinch nutmeg
  • 50 g bacon, mixed
  • 4 tablespoon cheese, grated

Instructions

  1. Make a dough from flour, butter, egg yolk, salt and water and let it rest in the refrigerator for 1 hour.
  2. Clean the leek, cut into thin rings and stew in 1 tablespoon butter for 10 minutes. Beat the eggs with the addition of salt, pepper and nutmeg. Bring the milk to the boil, remove the saucepan from the stove and stir in the egg mixture. Heat egg milk again and reduce, stirring constantly, until it becomes creamy. Then add the leek rings and let the mixture cool down.
  3. Line a buttered cake tin with the batter and prick it several times with a fork. Spread the leek mixture on top, sprinkle with diced bacon and grated cheese. Bake in the preheated oven for 30 minutes at 200 ° C on the middle rack.
  4. Let the cake cool for 5 minutes before removing it from the mold.
