Ingredients

  • 700 g turkey breast
  • 3 bay leaves
  • 1 sprig rosemary
  • 50 g honey
  • 70 g butter
  • 3 orange (s)
  • salt and pepper
  • Seasonal salad, mixed
  • 2 teaspoons capers
  • 1 spring onion (s)

Instructions

  1. Wash the turkey breast, pat dry and pepper generously.
  2. In a pan with bay leaves and rosemary in a little olive oil, sear them on all sides, season with salt and continue to cook on a mild heat.
  3. Cut the butter into fine slices and place a slice on the breast and let it melt. Turn the turkey breast over and top with the butter again, and so on a few times.
  4. Just before the end of the cooking process, add honey and let it caramelize on a mild heat until the breast has turned dark / golden brown all around. Wrap the turkey breast in aluminum foil and keep it warm to 80 degrees.
  5. Add the grated zest of one orange and the juice of the 3 oranges to the pan, reduce until the sauce is reduced to taste. Drain through a fine sieve.
  6. Cut the turkey breast into thin slices. (outside brown, inside light)
  7. Serve like this:
  8. Spread the lettuce on half of a plate. Fan the turkey breast on the other half. Sprinkle finely sliced spring onions and capers on top. Spread the sauce on top.
