Ingredients

For the dough: (batter)

  • 80 g chips (banana chips)
  • 140 g butter
  • 100 g suar
  • 1 lemon, grated zest and half the juice
  • 2 egg (s)
  • 120 grams flour
  • 120 g hazelnuts, round
  • 1 teaspoon baking powder, heaped
  • 3 banana (s), finely mashed
  • 1 packet vanilla sugar
  • 80 g chocolate sprinkles
  • 125 ml buttermilk, multivitamin

For the glaze:

  • 100 g couverture, (whole milk)
  • 3 tablespoon hazelnuts, roughly chopped

Instructions

  1. Mix all ingredients for the batter, bake in a greased loaf pan for about 1 hour at 190 degrees, then cover with the glaze and sprinkle with the chopped nuts.
  2. I love this cake! The bananas make it wonderfully juicy. I bake it like this or similar in all possible variations, also as a spice cake for Christmas.
  3. A little tip for chopping the banana chips and nuts: I put them in a freezer bag and then hit them vigorously with a frying pan.
