Ingredients

  • 3 large apples, approx. 500 g, peeled, pitted, grated
  • 200 g suar
  • 400 ml juice (elderberry juice)
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon powder
  • 2 large egg (s)
  • 100 ml rapeseed oil
  • 1 packet vanilla sugar
  • 150 g instant flour
  • 50 g walnuts, round
  • 1 teaspoon baking powder with saffron
  • 100 ml apple juice, naturally cloudy
  • Icing sugar for sprinkling
  • Rapeseed oil for baking

Instructions

  1. Mix the apples with the sugar and slowly reduce 2/3 of them to half with the elderberry juice over a very low heat. Then puree with a blender.
  2. Mix the remaining apple and sugar mixture with lemon juice, cinnamon, eggs, rapeseed oil, vanilla sugar, flour, walnuts, baking powder and apple juice.
  3. Brush a waffle iron with rapeseed oil and gradually bake the waffles. Sprinkle these with powdered sugar and serve with the warm elderberry sauce.
  4. Makes 8 waffles.
