Ingredients

  • 2 large apples, juicy
  • 100 g almonds, chopped
  • 1 packet tartar baking powder
  • 60 g cranberries, possibly a little crushed, or raisins
  • 250 g spelled flour
  • 2 tablespoon cocoa powder
  • 2 tablespoon flaxseed meal
  • 4 tablespoon sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon speculoos spice
  • possibly apple juice or orange juice

Instructions

  1. Peel and core the apples and grate with a coarse grater. Sprinkle with the sugar, cover with foil and set aside.
  2. Mix the spelled flour, almonds, baking powder, cranberries, cocoa powder, flaxseed meal, cinnamon and speculoos spice together in a bowl. Then there are the grated apples, which have pulled juice in the meantime. Mix everything together well. If the dough is too dry, you can add some apple or orange juice.
  3. Pour the dough into a loaf tin lined with baking paper and press in well. Bake at 160 ° C for approx. 40 - 45 minutes.
