Ingredients

  • 375 g apples
  • 100 g suar, brown (raw cane suar)
  • 75 g cranberries, dried
  • 2 tablespoon calvados
  • 100 g raisins
  • 250 g flour, (whole spelled flour)
  • 2 teaspoons baking soda
  • 100 g hazelnuts, roasted, whole
  • 1 egg yolk
  • 8 walnuts, (halves)
  • 1 tablespoon cranberries, dried

Instructions

  1. Core the apples, do not peel and grate coarsely. Put the apple mixture together with the cane sugar, cranberries, raisins and the calvados in a bowl and leave covered for at least 5 hours, or better overnight.
  2. The next day, mix flour with baking powder and fold into the apple mixture with the hazelnut kernels. Shape it into a small loaf of bread, brush it with the egg yolk and decorate with the remaining cranberries and walnut halves.
  3. Bake at 160 ° C in a preheated oven with convection for about 1 hour.
  4. If stored in a cool and dark place, it will keep for at least 4 weeks
  5. The apple bread is also suitable as a healthy snack for school or office.
