Ingredients

  • 3 apples (e.g. Boskoop or Braeburn)
  • 200 g hazelnuts, chopped
  • 250 g quark
  • 1 packet vanilla pudding powder
  • 1 tablespoon semolina or semolina flour, hard white semolina
  • 2 egg (s)
  • sugar
  • cinnamon

Instructions

  1. Preheat the oven to 160 Β° C (convection). Quarter the apples and cut out the core.
  2. Put the apple pieces in a small, tall casserole dish and dust with cinnamon, I use about a teaspoon for 4 apples. Scatter the chopped hazelnuts on top.
  3. Separate the eggs, beat the egg whites with 1 tablespoon of sugar until the mixture is firm. Mix the quark, vanilla pudding powder, semolina flour and the 2 egg yolks to a homogeneous mass. Add sugar as you like, I`ll take 2 tablespoon, it`s not too sweet.
  4. Fold the egg white into the mixture and pour everything over the apples. Bake for 45 minutes and serve hot.
