Put the flour in a mixing bowl, make a well in it. Crumble the yeast and pour in. Add the milk with 1 tablespoon of sugar to the yeast, stir until smooth and cover and let rise for about 15 minutes.
Add the remaining sugar, vanilla sugar, butter and egg. Knead everything and let rise for another 30 minutes. Roll out the dough, press it into a greased springform pan (28 cm diameter) and pull up the edge a little.
For the topping, stir together the crème fraîche, egg and vanilla sugar until smooth and pour onto the dough. Peel the apples, cut into wedges, spread them in a fan shape on the cream and sprinkle with almonds. Bake in a preheated oven at 180 ° C (convection: 160 ° C) for about 25 - 30 minutes.
Heat the jam, brush the apples with it and sprinkle the edge with powdered sugar. Serve lukewarm with cinnamon cream.
