Ingredients

For the dough: (kneaded dough)

  • 300 grams flour
  • 1 teaspoon Baking powder
  • 1 pinch (s) salt
  • 150 g butter
  • 1 egg (s)
  • 150 grams sugar

For covering:

  • 750 g apples
  • 40 grams sugar
  • 0.5 teaspoon ½ cinnamon
  • some water
  • 3 egg yolks
  • 60 g suar
  • 1 packet vanilla sugar
  • 500 g quark
  • 1 lemon (s), the zest it
  • 40 g semolina
  • 3 egg whites

Instructions

  1. Make a shortcrust pastry from the kneading dough ingredients.
  2. Peel, quarter and slice the apples. Steam with the sugar, cinnamon and a little water for 5 minutes.
  3. Mix egg yolks with sugar and vanilla sugar until frothy. Add lemon zest, quark and semolina. Beat egg whites until stiff and fold in carefully.
  4. Butter a springform pan and line with about 3/4 of the dough. Place the apples on top, then pour the curd mixture over it. Crumble the rest of the dough over it. Bake at 180 degrees for 1 hour.
