Ingredients

  • 5 large apples
  • some lemon juice to drizzle over

For the sprinkles:

  • 90 g butter, soft
  • 150 g flour, possibly a little more
  • 90 g suar, brown

For the ice cream:

  • 300 ml cream
  • 250 ml milk
  • 1 vanilla pod (s)
  • 1 pinch (s) salt
  • 3 egg yolks
  • 4 tablespoon sugar

For the set:

  • cinnamon sugar
  • 5 mint leaves

Instructions

  1. For the crumble:
  2. Peel the apples and cut into small cubes. Drizzle with lemon juice to prevent the apples from browning.
  3. For the sprinkles:
  4. Cut the butter into pieces. Knead with the flour, brown sugar and a little cinnamon to form crumbs. If the dough is too sticky, add a little flour. Put the apples in a tin and distribute the crumbs evenly over the top.
  5. Bake in a preheated oven at 200 ° C top / bottom heat for approx. 20 - 30 minutes.
  6. Arrange on slate with sugar and cinnamon, a scoop of vanilla ice cream and a mint leaf on the scoop of ice cream and serve.
  7. For the vanilla ice cream:
  8. Heat the milk and cream. Slit open the vanilla pod, scrape it out and add the pulp and the pod. Mix the salt, egg yolk and sugar together until creamy.
  9. Fish the vanilla pod out of the milk and slowly add the milk to the egg yolk mixture while stirring, then chill. Then freeze in the ice cream maker.
