Ingredients

  • 600 g asparaus, white
  • 1 small onion (s)
  • 1 bunch chives
  • 200 g ham, cooked, sliced
  • 2 cups sweet cream
  • 250 g pasta (Farfalle)
  • a bit salt
  • some pepper, white
  • some cayenne pepper
  • 2 tablespoon olive oil
  • 0.5 ½ lemon (s), add the juice

Instructions

  1. Cut the ham into strips approx. 2 cm wide.
  2. Peel the asparagus, cut off the woody ends. Cut the asparagus diagonally into pieces approx. 2-3 cm long.
  3. Cut the onion into fine cubes. Cut the chives into rolls.
  4. Heat the oil in a large pan with a lid and fry the chopped onion in it until translucent (do not fry).
  5. Add the asparagus pieces to the onion in the pan, season with salt and cook covered for about 5 minutes.
  6. Pour in the cream and cook on a low heat for another 5 minutes (without the lid).
  7. In the meantime, cook the noodles in salted water until they are firm to the bite.
  8. Drain the pasta and collect approx. 200 ml of the pasta water.
  9. Season the asparagus sauce with a little white pepper, cayenne pepper and the lemon juice and season again to taste.
  10. Mix in the pasta, pasta water and the ham strips and let steep for a few more minutes.
  11. Serve sprinkled with chives.
