Ingredients

  • 2 banana (s), ripe
  • 1 avocado (s), ripe
  • 2 egg (s), alternatively 80;Chia egg81;: Mix tablespoons chia seeds with 6 tablespoons water
  • 75 ml milk, here almond drink
  • 50 g coconut oil
  • 35 g maple syrup
  • 110 g flour
  • 45 g oatmeal
  • 40 g walnuts, chopped
  • 1 teaspoon Baking powder
  • 1 teaspoon baking soda, alternatively baking powder
  • 0.5 teaspoon ½ cinnamon
  • 0.25 teaspoon ¼ salt

Instructions

  1. Preheat the oven to 180 ° C top / bottom heat. Line a 22 cm loaf pan with baking paper. Mash the bananas in a bowl. Halve the avocado, remove the stone and also mash finely. Add eggs, milk, melted coconut oil and maple syrup and mix well.
  2. Mix the dry ingredients together in a second bowl. Add the liquid ingredients and fold in well.
  3. Pour the dough into the mold and bake in the preheated oven on the middle rack for approx. 60 - 70 minutes. If the bread browns too much on the surface, cover it with aluminum foil after approx. 45 minutes. Take out and let cool slightly.
  4. With this delicious avocado bread, the avocado is not on, but hidden in the banana bread. It is ideal for breakfast, for in between meals or as a healthy alternative to cake.
