Ingredients

  • 2 large sweet potatoes, (500g each) with the orange meat!
  • 200 g feta cheese, cut into 1 cm cubes
  • 1 handful olives, black (best quality), pitted and chopped
  • 0.5 ½ onion (s), red, chopped
  • 0.5 ½ bell pepper (s), yellow or red, finely chopped
  • 1 clove garlic, finely chopped
  • some coriander green, chopped
  • 0.5 teaspoon ½ cumin
  • 0.5 teaspoon ½ cayenne pepper
  • 0.25 teaspoon ¼ black pepper, freshly ground
  • 2 tablespoon olive oil, high quality
  • 0.5 ½ lemon (s), add the juice
  • some sour cream, tzatziki or hummus
  • 0.5 teaspoon ½ coriander

Instructions

  1. This recipe is suitable as a main course for 2 people or as a side dish / starter for 4.
  2. Preheat the oven to 200 ° C.
  3. Rough the sweet potatoes well and place them on a baking sheet lined with baking paper and bake for about 45-60 minutes - until they are soft.
  4. In the meantime, prepare the salad:
