Ingredients

  • 2 onions)
  • 750 g tomato (s)
  • 1 bunch basil
  • 2 large zucchini
  • 100 g butter
  • salt and pepper
  • 3 tablespoon breadcrumbs
  • Herbs your choice
  • 25 g parmesan, freshly rated
  • 5 tablespoon heavy cream

Instructions

  1. Peel and dice the onions. Wash tomatoes and cut into pieces.
  2. Lightly fry both ingredients in a pan with approx. 50 g butter. Season with basil, salt and pepper and place in a flat baking dish.
  3. Clean the zucchini, cut in half lengthways and place on the tomato and onion mixture with the cut surface facing up.
  4. Mix the remaining butter, breadcrumbs, Parmesan, cream and herbs into a paste and spread on the zucchini.
  5. Bake in the preheated oven at 225 ° C (level 4) for about 25 to 30 minutes until the crust is golden brown.
  6. Baguette, ciabatta or rice go very well with this.
