  • 2 medium egg (s)
  • 1 medium nectarine (s) or other fruit
  • some honey, possibly
  • some butter or coconut oil for frying

Instructions

  1. Mash the banana with a fork. Add eggs and chia seeds and mix everything into a batter. Place in the refrigerator for 5 - 10 minutes. Meanwhile, cut the nectarine or other fruit into thin slices and set aside. Heat the fat in the pan and place about a tablespoon of the batter in the center. Fry until golden brown on both sides. Place the finished pancake on a plate and spread a few slices of fruit on it. Repeat the process until the batter is used up. If you like, you can use a little honey to sweeten it at the end, but the pancakes are also very tasty without them.
