Put the flour in a bowl, make a well in the middle. Crumble in the yeast, pour some water over it and dissolve the yeast. Dust lightly with flour and cover and let rise in a warm place for about 15 minutes.
Add the rest of the water, the oil and the salt and knead everything well. Cover and let rise at room temperature for about 45 minutes.
In the meantime, prepare the sauce and topping.
Knead the dough briefly again on the lightly floured work surface, divide and roll out. Place in pizza tins or on a baking tray, shape the edges. Cover the pizza, bake at 225 ° C to 250 ° C on the bottom rack for about 10 minutes.
For the sauce, peel and finely dice the onion. Do not heat the oil too much in a saucepan; let the onion turn to glass. Press the peeled garlic through the press and add the mashed tomatoes with their juice. Season the mixture with salt, pepper, basil, thyme and tomato paste, and let it simmer for about 30 minutes while stirring. Spread the sauce evenly and not too thickly on the rolled out pizza dough, cover the pizza as desired and bake.
Salami, mushrooms, cheese, ham, tuna, peppers and much more are suitable as topping.
