Basil Dressing

• 2 cloves garlic
• 1 bunch basil, large
• Salt and pepper, freshly ground black
• 1 tablespoon vinegar (white wine vinegar)
• 6 tablespoon olive oil
• 2 tablespoon parmesan, freshly grated

Instructions

1. Put the garlic, basil leaves, a pinch of salt and the vinegar in a blender. Mix briefly, then slowly pour in the oil with the engine running until an emulsion has formed, Pour into a bowl, then stir in the cheese and season with the freshly ground pepper.
