Ingredients

  • 6 tomato (s), peeled and chopped
  • 2 onion (s), chopped
  • 2 red peppers, cut into strips
  • 10 chilli pepper (s), mild, in strips
  • 6 egg (s)
  • 2 cloves garlic, chopped
  • 1 tablespoon bread flour, (wake flour)
  • thyme
  • salt and pepper
  • Piment d`Espelette or hot paprika powder
  • sugar
  • 1 bay leaf
  • 4 slices ham, Bayonne ham (slightly baked)

Instructions

  1. Slowly steam the onions in a little olive oil. Add the chilli peppers and bell peppers. When the onions are steamed blond. Add the tomatoes, garlic, herbs and some pimento d`Espelette, season with salt, pepper and lightly add sugar. Steam for about 30 minutes.
  2. Beat the eggs with the baking flour and add to the piperade. Let set for 5 minutes while stirring. Spread on plates and serve with the ham slice.
