Ingredients

  • 1 kg potato (s), small waxy ones
  • 4 tomato (s)
  • 4 spring onion (s)
  • 1 bunch parsley, smooth
  • 4 leaves mint, fresh
  • 1 lemon (s), juice it
  • 6 tablespoon olive oil
  • 1 pinch (s) coriander
  • salt
  • pepper

Instructions

  1. Wash the potatoes and cook in the skin until cooked. Then halve or quarter depending on the size and place in a bowl. To dice tomatoes. Cut the spring onions into fine rings. Finely chop the parsley and mint and add to the potatoes with the spring onions and tomatoes. Mix everything well.
  2. Roast the coriander seeds, pound them lightly, whisk together with lemon juice, salt, pepper and olive oil to make a sauce. Mix with the salad and let it steep for at least an hour.
