Batata Harra (Spiced Potato)

Delicate and aromatic Lebanese potatoes are prepared in two stages: first, they are boiled until half cooked, then fried until golden brown with fragrant spices.

Ingredients

  • Potatoes – 1 kg
  • Olive oil – 80 ml
  • Zira – 1/4 teaspoon
  • Coriander – 1/4 teaspoon
  • Cayenne pepper – 1/4 teaspoon
  • Garlic – 3 cloves
  • Cilantro – 20 g
  • Lemon juice to taste
  • Salt to taste
  • Black pepper – to taste

Directions

  1. Take the groceries on the list.
  2. Put peeled tubers of approximately the same size in salted boiling water and cook for 10 minutes. Drain the water, cool the potatoes slightly.
  3. Cut into small cubes.
  4. Grind cumin (cumin), coriander seeds, cayenne pepper, black peppercorns.
  5. Warm-up a frying pan with olive oil, throw in the spice mixture – “reveal” the aroma for a minute.
  6. We spread the potatoes, salt, mix and fry until golden brown. At the very end, sprinkle with lemon juice and press the garlic through a press.
  7. Add the cilantro leaves.
  8. Spiced potatoes (sweet potato harra) are ready. We serve to the table.
