- 1 kg beef fillet (s), whole, well hung
- 12 slices Parma ham
- 2 tablespoon horseradish
- Sea salt, from the mill
- Black pepper from the mill

- Take the beef fillet out of the refrigerator for 1 hour before preparation.
- Preheat the oven: convection, 180 °
- Wash the fillet, pat dry and sprinkle with sea salt and black pepper and then brush all over with horseradish. Then wrap the Parma ham completely around it. There should be no vacancies left.
- Place parchment paper on a wire rack in the oven and top with the beef fillet. The baking paper is only there to catch any leaking liquid (not much) and to avoid cleaning the oven.
- Time: It depends a lot on how thick the fillet is. Do you have the end, the middle or the beginning. If it`s thin, then about 35 minutes and for thicker pieces 45 minutes.
- Finished! So it`s easy to make and tastes really delicious. It doesn`t need a sauce.
- Side dishes to taste.
- Is also something great for guests when you don`t have time!
