Ingredients

  • 2 sausages (beef sausage)
  • 1 onion (s)
  • 1 bell pepper (s)
  • 1 zucchini
  • 2 carrot (s)
  • 1 tablespoon ketchup
  • 1 clove garlic
  • salt and pepper
  • possibly oil

Instructions

  1. Dice the onion, bell pepper, zucchini, carrot, and garlic. Slice the sausages.
  2. Heat a small amount of oil in a pan over medium-high heat (if using a non-stick pan, you can skip the oil).
  3. Fry the diced onion for 2 minutes until softened.
  4. Add the garlic and fry for 1 minute until fragrant.
  5. Add the sausage slices and cook for 2-3 minutes.
  6. Add the diced bell pepper, zucchini, and carrot, and stir.
  7. Add 1/2 cup of water, bring to a boil, then simmer for 4-5 minutes until the vegetables are tender but still have some bite.
  8. Stir in 1 tablespoon of ketchup.
  9. Season with salt and pepper to taste.
