- 1 medium onion (s)
- 2 tablespoon mustard (Dijon) coarse, medium hot

- Boil the beetroot, peel and cut into very small cubes.
- Cut the onion into small cubes and add, season the salt, vinegar and oil and mix in. Now mix in 2-3 tablespoons of grainy Dijon mustard (medium hot).
- Also ideal as an accompaniment to cold cooked meat and also to smoked salmon.
