Ingredients

  • 1 cup quinoa
  • 10.5 1½ cup water
  • 3 medium beetroot
  • 2 tablespoon olive oil
  • 1 tablespoon vinegar (plum or pomegranate)
  • 1 lemon (s), organic
  • 6 radishes, cut into crescents
  • 2 tablespoon onion (s), finely chopped
  • 0.25 ¼ cup chives, cut into fine rolls
  • 0.5 ½ cup cranberries, dried
  • 2 apples, peeled and cut into small pieces

Instructions

  1. Cook the quinoa according to the instructions on the package. Cook the beetroot in the pressure cooker for 15-20 minutes and allow to cool.
  2. Rub the lemon peel, then squeeze the lemon. Put both in a bowl with the other ingredients. Cut the beetroot into cubes and mix with all the other ingredients.
  3. The salad tastes fruity with a little more lemon. Depending on your taste, you can also add a little sugar or increase the amount of dried cranberries.
