Ingredients

  • 2 medium peppers, red
  • 500 g sliced pork, lean (ham sliced)
  • 200 ml chicken broth
  • 300 ml tomato (s), passed
  • 1 piece (s) ginger, the size a walnut
  • 1 tablespoon lemon juice
  • salt
  • pepper
  • Cayenne pepper
  • curry powder
  • coriander
  • some oil for frying

Instructions

  1. Core the red peppers and cut into bite-sized pieces.
  2. Heat oil in a large pan over medium-high heat. Add the pork slices and sear for 2-3 minutes until browned. Season with salt and pepper.
  3. Peel and grate the ginger (walnut-sized piece) and add to the pan.
  4. Add the pepper pieces to the pan and sauté for 2-3 minutes.
  5. Pour in the chicken broth, passed tomatoes, and lemon juice. Bring to a simmer over medium heat and cook for 10 minutes.
  6. Season with curry powder, cayenne pepper, coriander, and additional salt and pepper to taste.
  7. Serve with rice.
